COOKING REGULATIONS
1. All turn ins must be cooked on site
2. Pits must be wood and/or charcoal *no pellets, propane or gas cooking allowed
ENTRY FEES
1. Adult ages 16 and up: $100 per team
2. Kids ages 8-15: $30 per team
PRIZE PAYOUTS

ENTRY INSPECTIONS
1. All entries will be inspected prior to preparations and must still be in packaging
2. Inspection times: Friday 11/22 7:00pm-9pm and Saturday 11/24 7am-8am
COOK MEETING
1. Adult teams: Friday 11/22 @ 7pm.
*At least 1 person from each team must attend
2. Kid teams: Saturday 11/23 @ 7:30am
*1 adult should be in attendance for safety supervision. No adult can offer any hands on assistance. All preparations, cooking, turn ins, and station cleanup is to be done by team members only.

**all meat categories must be entered in order to qualify for grand champion
*Kids
A) Chicken thigh bone in with skin
B) Pork Chop bone in thick cut
SPECIAL CATEGORY
People’s Choice-Louisiana Food
*if you were to entertain someone from out of state, what Louisiana food would you serve them?
**No team can only turn in people’s choice entry
JUDGING CRITERIA
1. Chicken (5 thighs) will be judged on appeal, texture, skin and flavor. *sauces/glazes are allowed
2. Pork Rib (5 ribs) will be judged on appeal, texture, smoke and flavor
3. Brisket (5 slices, sliced approximately 1/4 inch thick) will be judged on appeal, smoke ring, texture and flavor
4. Kids chicken thighs *sauce/glaze allowed (5 thighs) and pork chops (3 chops) will be judged on appearance, texture and flavor
5. Louisiana entry item will be judged by the people pertaining to their overall favorite flavor/taste
